For anyone looking for a plant-based brownie, then look no further, these sweet potato brownies are amazing and super fudgy. I absolutely love brownies, I must confess. But let’s be honest, they’re pretty indulgent, now for most people, brownies aren’t something you eat on a regular basis, so there’s no problem with treating yourself and indulging. But for anyone looking for either a lower fat, gluten free or plant based version, then I’ve got you covered. These sweet potato brownies are insane!

Time to get prepared

The only real preparation involved with this is to roast a couple of sweet potatoes for the puree.

For this recipe you will need 2 cups of sweet potato puree, so you will need to roast of a couple of large sweet potatoes or 4/5 smaller ones. Simple bang them in the oven at 185°c for approximately 30 minutes or until fully cooked (you can easily get a knife through them).

Change it up

Like most of the recipes I post, you can adapt them to suit your personal taste. I have kept this recipe fairly basic. But add in your favourites like chocolate chips, nuts, swirls of nut butter etc.

 

Sweet Potato brownie

Plant based and gluten free recipe, for an amazingly fudgy sweet potato brownie

Cook Time 30 mins
Servings 12 people

Ingredients
  

  • 2 cups sweet potato puree see section above for "how to"
  • 1 cup maple syrup
  • ½ cup nut butter
  • ½ cup chocolate spread double the quantity of nut butter if you do not have chocolate spread
  • 1 tsp vanilla essence
  • 2 cups oil I used oilve oil
  • 1 cup coco powder
  • 1 pinch salt
  • 2 tsp baking powder
  • cups oat flour ground oats (gluten free)

Instructions
 

  • Make sweet potato puree as per section above this recipe.
  • Preheat oven to 175°c. Like a baking tray with parchment paper.
  • Add your sweet potato puree to a large bowl. Add in your maple syrup, nut butter, chocolate spread, vanilla essence and oil. Mix thoroughly with a spatula.
  • Now add the cocoa powder, salt, baking powder and stir well. Add your oat flour and mix well. The mixture will be quite thick.
  • Spread this mixture into your baking tray, place in the oven and bake for approximately 27-32 minutes. Poke the centre with a skewer, it won't come out completely clean as you want to leave it quite gooey. If the skewer comes out with a little dry mix on, that's ok.
  • Leave to cool for between 30 minutes to 1 hour. Divide into squares and enjoy.
