Smoothies, snacks and a Super U

Something new

One of the reasons I love my job as a Chef and food blogger is that I get asked to try new products on a regular basis. I will only try the product in the first place if it is something that I would actually use. I definitely only recommend a product if I truly believe in its story and quality. Recently I tried a product from a company called Super U that produce Superfood and Plant based Protein blends as well as some stunning coconut bowls.

The blends produced by Super U are 100% organic, gluten free, vegan and sustainable……..oh and tastes amazing! There is a great story behind the company with Sean and Charlotte, the founders, so the website is well worth a visit. https://superu.co.uk/

The blends I tried were the “Clean Green – The Immunity booster” and the “Berry Beauty – The antioxidant booster”. Both were great products, that I would highly recommend and loved using.

Give your Smoothies a boost

Having a Green smoothie is a fantastic way to get an abundance of Vitamin and Minerals into your diet, but adding a spoonful of Super U Clean Green definitely takes it to another level. The ingredients in the Clean Green are :Baobab, Barley Grass, Chlorella, Moringa, Pineapple, Wheatgrass, Spirulina and Camu Camu. Mixed with your original ingredients and you can see that you have a supercharged, ass kicking Green Smoothie. By necking one of these bad boys on a regular basis, I am confident you will feel like donning some spandex, whip on a cape and create a new Superhero name for yourself (or may be just actually feel some genuine health benefits after a short period).

Ofcourse if Green isn’t your colour and you’re more of a Red kinda person, then Berry Beauty is for you. Again, with the ingredients in the Super U “Berry Beauty Antioxidant booster” including Chia Seeds, Acai, Aronia, Blackcurrant, Blueberry, Goji, Maqui, Strawberry, Acerola, Cranberry, you are definitely not going to be short on your nutrient quota.

With these superfood blends you have an opportunity to add an extra nutrient boost to many recipes not just smoothies. I experimented with some Berry Bliss balls and they were (how can I say this without sounding like I’m being big headed)….EPIC!

These Superfood Blends can really help with your daily intake and will give you that step in the right direction for a healthier body.

Recipes

If all the above sound like something you need in your life then keep on reading. Below you will find the recipes for everything already mentioned.

Key Lime Clean Green Smoothie Bowl

Ingredients

  • Green Smoothie bowl using Super U blends

Key Lime Clean Green Smoothie Bowl

    1 x Avocado

  • 1 x Granny smith Apple
  • handful of Spinach
  • 2 x frozen Bananas
  • Juice of 1 Lime (and zest for topping)
  • ½ cup Coconut water
  • Maple Syrup to taste
  • Spoonful of Super U Clean Green Powder

Toppings

You can obviously top with whatever your little heart desires, I have listed the toppings I used, just in case you are looking for a little inspiration.

  • Quinoa Pops
  • Coconut Yoghurt
  • Kiwi
  • Coconut
  • Zest of Lime

Method

This is a VERY complicated recipe, so please concentrate and try to keep up. Throw everything into a blender and Blitz! Put enough Coconut water into the blender so it covers 2/3 of the ingredients and enough Maple Syrup to taste (I would suggest 1 x Tablespoon).

Top with your favourite ingredients (I would strongly suggest zest of Lime though). Enjoy that bad boy and reap the health benefits.

Berry Beauty Smoothie Bowl

Ingredients

Berry Beauty Smoothie Bowl

Berry Beauty Smoothie Bowl

  • 2 x Frozen Bananas
  • 200g Mixed frozen Berries
  • 1 Tablespoon Maple Syrup (or any other sweetener of your choice)
  • 1 x spoonful of Super U Berry Beauty Powder (optional)
  • ½ cup Coconut Water
  • 1 x tablespoon of Coconut Yoghurt (you can use Greek Yoghurt if you prefer)

Toppings

Again, you can top with your favourite things, but below I have listed what I used.

  • Fresh Strawberries
  • Desiccated Coconut
  • Quinoa Pops
  • Pomegranate
  • 2 big beautiful bliss balls (try saying that after a couple of drinks). Recipe for these are below.

Method

Another complicated recipe that is not only taxing on the old noggin, but extremely time consuming-

Throw everything in the blender, same rules apply with the coconut water as above. Blitz until smooth and enjoy.

Strawberry, Coconut and Dark Chocolate Bliss Balls

Ingredients

  • 400g Frozen Strawberries

    Berry Beauty Bliss Balls

    Berry Beauty Bliss Balls

  • 400g Coconut Flour
  • 2 x spoonfuls Super U Berry Beauty Powder
  • 170g Dark Chocolate
  • 1 x teaspoon Coconut Oil

Method

  1. Place frozen Strawberries into a blender and blitz until smooth.
  2. Then add the coconut flour and Super U Berry Beauty, mix with spoon until the flour mix is all absorbed. If the mix is still wet add a little more Coconut Flour. Place in fridge for 30 minutes and allow the mix to firm up.
  3. Roll the mix into little balls and place back in the fridge or freezer to harden slightly.
  4. Melt the chocolate with the coconut oil in a bowl above some boiling water or the microwave.
  5. Dip the balls into the chocolate and allow to set before devouring the entire plate.
