Pancake Day is coming…

Lashings of Chocolate Sauce, a smothering of Maple Syrup or maybe some Berries…..well at least one of these things are healthy. When you think of Pancake day, the word “healthy” isn’t usually the word you would associate with it. Well the Urban Canteen wants to give you some reeeeaaaaally tasty alternatives. Not only will they satisfy that Pancake day craving, they are also healthy. So no need for staring at yourself in the mirror afterwards whilst rubbing your tummy and saying “what have I done”!

Some new ideas

There are obviously hundreds of different variations of Pancakes out there with even more toppings. But in true Urban Canteen style, we have picked three that are not only healthy, but quick also.

Something for everyone is what we’re trying to achieve here, I think may be we have done it. Two of these recipes are Gluten Free, one is packed full of Protein which make them ideal for a snack during the day, but most importantly they all taste sooooo good!

 

Blueberry and Coconut

First up are the Blueberry and Coconut. Now these are probably the most time consuming out of the three, only because they are quite a fragile mix, so care and attention is required here. But as soon as you have knocked these bad boys up a couple of times, you’ll be banging them out like there’s no tomorrow. This recipe comes from the lovely ladies Hemsley & Hemsley. They are a great Gluten free recipe, that will have you coming back for more. I do have a couple of tips when making these though. Firstly, when adding the Coconut Oil, add it slowly as throwing it all in at once could cause your mix to separate (if that does happen, try to blitz it with a stick blender to bring the mix back into a batter). Secondly, like I previously mentioned, this is a fragile mix, so once you have cooked them on one side, I usually put the pan under the grill just to firm up the topside before flipping over, this will ensure it doesn’t break when turning over.

N.B. In the list of ingredients you will see “Baking Powder” but in the method it reads “Bicarbonate of Soda”, Bicarbonate of Soda is the correct ingredient in this recipe not Baking Powder.

My Protein Pancakes

These are probably the quickest pancakes you’ll come across, as well as being pretty darn tasty they also contain 34g of Protein per serving which make them perfect for a snack pre or post workout. My tip for these Protein packed treats would be to have them with a slightly wetter topping, for example, Berries and Greek Yoghurt.

Oat and Banana Pancakes

Another Gluten Free recipe for Pancakes (depending on what oats you use, some brands of oats are contaminated with Wheat during processing, so you may need to check). These Pancakes are super quick and easy to do.

Ingredients

  • 3 x Bananas
  • 3 x Eggs
  • 1 x cup of Oats
  • 1tspn Baking Powder
  • Pinch of salt
  • Maple Syrup to serve
  • Banana to top or your choice of any other fruit

Method

  1. Put the Bananas, Eggs, Oats, Baking Powder and Salt in a blender and blitz until smooth.
  2. allow the batter to stand for approximately 20 mins to thicken slightly, then cook over a medium heat.
